An introduction for Paris future culinary stars to the excellence of Scotland’s bounty

Last month, Seafood Scotland had the pleasure of delivering a dedicated masterclass at Ferrandi Paris, one of France’s most prestigious gastronomy and hospitality management schools. Founded more than a century ago, the institution now operates six campuses, four training restaurants and supports around 2,500 students preparing for careers across the food sector.

This was not the first collaboration between Seafood Scotland and Ferrandi Paris. Both organisations share a strong commitment to nurturing the next generation of culinary talent, making the partnership a natural fit.

Supported by Harriet Bernot, Scotland Development International’s food & drink specialist, and ambassador chef in France Emilien Rouable, Marie-Anne Omnes, Head of Trade Marketing for Europe at Seafood Scotland, joined a full week of food supply chain workshops and talks. The session engaged 84 trainees enrolled in the school’s professional retraining programme (CAP Cuisine), which attracts participants of all ages and backgrounds united by a passion for gastronomy. Many are aspiring restaurateurs.

To showcase the breadth of Scotland’s food and drink offer, Salmon Scotland, Quality Meat Scotland and spirits importers also took part. Together, the group introduced students and teachers to the Scottish seafood sector, addressing common misconceptions while providing the opportunity to taste some of Scotland’s flagship products. Following the success of the session, Seafood Scotland hopes to deliver similar masterclasses across France in the future, continuing to build knowledge and enthusiasm for Scottish seafood among emerging culinary professionals.
